Almond Wedding Cake

  • Author: Jasmine
  • Total Time: 2 hours 55 minutes

Ingredients

• 2 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup unsalted butter, softened
• 1 1/2 cups granulated sugar
• 4 large eggs
• 1 teaspoon almond extract
• 1/2 cup milk
• 4 cups cream cheese, softened
• 1 cup unsalted butter, softened
• 4 cups confectioners’ sugar
• 2 teaspoons almond extract

Instructions

• Step 1: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
• Step 2: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
• Step 3: In a large bowl, beat the butter and granulated sugar together until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time, then stir in the 1 teaspoon of almond extract.
• Step 4: Alternate adding the flour mixture and milk to the butter mixture, mixing just until incorporated. Pour the batter evenly into the prepared cake pans.
• Step 5: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
• Step 6: To make the frosting, beat the cream cheese and 1 cup of butter together until smooth and creamy. Gradually add the confectioners’ sugar and 2 teaspoons of almond extract, beating until well combined.
• Step 7: Once the cakes are completely cool, use a serrated knife to trim the tops of the cakes to create a flat surface. Place one layer on a serving plate or cake stand, and spread a generous amount of frosting on top. Repeat with the remaining layers, then frost the top and sides of the cake.
• Step 8: Refrigerate the cake for at least 2 hours before serving to allow the frosting to set. Enjoy your elegant and delicious almond wedding cake!
