Ingredients

• 2 large English cucumbers, thinly sliced
• 3 cloves garlic, minced
• 2 tablespoons rice vinegar
• 1 tablespoon soy sauce
• 1 teaspoon sesame oil
• 1 teaspoon sugar
• 1/4 teaspoon red pepper flakes (optional)
• Salt and pepper to taste


Instructions

• Step 1: Wash the cucumbers and slice them thinly, either using a sharp knife or a mandoline slicer. Place the sliced cucumbers in a large bowl.
• Step 2: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and red pepper flakes (if using). Season with salt and pepper to taste.
• Step 3: Pour the dressing over the sliced cucumbers and toss gently to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours, to allow the flavors to meld.
• Step 4: Just before serving, add the minced garlic to the salad and toss to combine. Adjust seasoning if needed.
