Ingredients
• 1 pound chorizo sausage, casings removed
• 8 large eggs, beaten
• 1 large onion, diced
• 1 red bell pepper, diced
• 2 tablespoons olive oil
• 1 teaspoon ground cumin
• 1/2 teaspoon smoked paprika
• Salt and black pepper to taste
• 8 large tortillas (burrito-size)
Instructions
• Step 1: In a large skillet over medium-high heat, cook the chorizo sausage, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Transfer the cooked chorizo to a plate and set aside.
• Step 2: In the same skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
• Step 3: Reduce the heat to low and add the beaten eggs to the skillet. Cook, stirring frequently, until the eggs are scrambled and cooked through, about 3-5 minutes.
• Step 4: Stir in the cooked chorizo, cumin, and smoked paprika. Season with salt and black pepper to taste.
• Step 5: Warm the tortillas according to package instructions.
• Step 6: Spoon the chorizo-egg mixture onto the center of each tortilla. Fold the bottom of the tortilla up, then fold in the sides and continue rolling tightly to create a burrito.
