Ingredients
• 2 cups fresh or frozen corn kernels
• 1 (15-ounce) can black beans, rinsed and drained
• 1 red bell pepper, diced
• 1 cup diced cucumber
• 1/2 cup diced red onion
• 2 tablespoons chopped fresh cilantro
• 2 tablespoons olive oil
• 2 tablespoons lime juice
• 1 teaspoon ground cumin
• 1/2 teaspoon chili powder
• Salt and black pepper to taste
Instructions
• Step 1: If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw the kernels according to package instructions.
• Step 2: Rinse and drain the black beans, then add them to a large mixing bowl.
• Step 3: Dice the red bell pepper and cucumber, and finely chop the red onion. Add these ingredients to the bowl with the black beans.
• Step 4: Chop the fresh cilantro and add it to the bowl.
• Step 5: In a small bowl, whisk together the olive oil, lime juice, cumin, and chili powder. Season with salt and black pepper to taste.
• Step 6: Pour the dressing over the salad ingredients and gently toss to combine. Refrigerate for at least 30 minutes to allow the flavors to meld.
