• 1 pound fresh salmon, finely chopped
• 1/2 cup panko breadcrumbs
• 1/4 cup finely chopped red onion
• 2 tablespoons mayonnaise
• 1 tablespoon Dijon mustard
• 1 teaspoon lemon juice
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 4 brioche buns, split in half
Instructions
• Step 1: In a large bowl, gently mix together the chopped salmon, panko breadcrumbs, red onion, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until just combined. Be careful not to overmix, as this can make the burgers dense.
• Step 2: Divide the salmon mixture into four equal portions and shape them into patties, each about 1/2 inch thick.
• Step 3: Heat a large skillet or grill pan over medium-high heat. Add a drizzle of oil and cook the salmon burgers for 3-4 minutes per side, or until they are lightly browned and cooked through.
• Step 4: Toast the brioche buns until golden brown.
• Step 5: Place the cooked salmon burgers on the toasted buns and serve immediately with your favorite toppings, such as lettuce, tomato, and a dollop of tartar sauce or lemon-dill mayonnaise.
