Ingredients
• 1 pound rotini or penne pasta, cooked and cooled
• 1 cup diced salami or pepperoni
• 1 cup diced mozzarella cheese
• 1 cup sliced black olives
• 1 cup diced tomatoes
• 1 cup sliced cucumbers
• 1/2 cup diced red onion
• 1/2 cup grated Parmesan cheese
• 1/4 cup chopped fresh parsley
Instructions
• Step 1: Cook the pasta according to package instructions. Drain and rinse with cold water to cool completely.
• Step 2: In a large bowl, combine the cooked and cooled pasta, salami or pepperoni, mozzarella cheese, black olives, tomatoes, cucumbers, and red onion.
• Step 3: Prepare the dressing by mixing together 1/2 cup olive oil, 1/4 cup red wine vinegar, 2 tablespoons grated Parmesan cheese, 1 tablespoon dried Italian seasoning, 1 teaspoon garlic powder, and salt and pepper to taste.
• Step 4: Pour the dressing over the salad and toss gently to coat all the ingredients.
• Step 5: Sprinkle the remaining Parmesan cheese and chopped parsley over the top of the salad.
• Step 6: Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
