• 6 cups sliced fresh peaches (about 6-8 medium peaches)
• 1 cup granulated sugar
• 2 tablespoons cornstarch
• 1 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1 cup all-purpose flour
• 1 tablespoon granulated sugar
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 6 tablespoons unsalted butter, chilled and cubed
• 1/2 cup milk (any type)
Instructions
• Step 1: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
• Step 2: In a large bowl, combine the sliced peaches, 1 cup of sugar, cornstarch, cinnamon, and nutmeg. Toss gently to coat the peaches. Pour the peach mixture into the prepared baking dish.
• Step 3: In a medium bowl, whisk together the flour, 1 tablespoon of sugar, baking powder, and salt. Cut in the chilled butter using a pastry cutter or two forks until the mixture resembles coarse crumbs. Stir in the milk just until a soft dough forms.
• Step 4: Drop the dough by large spoonfuls onto the peach mixture, covering the top as evenly as possible. Bake for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.
• Step 5: Allow the cobbler to cool for 15-20 minutes before serving. Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
