Pistachio Encrusted Salmon Recipe

Ingredients

• 4 salmon fillets, about 6 oz each
• 1/2 cup raw, shelled pistachios, finely chopped
• 2 tablespoons panko breadcrumbs
• 2 tablespoons Parmesan cheese, grated (optional)
• 2 tablespoons olive oil
• 1 tablespoon Dijon mustard
• 1 teaspoon lemon zest
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper


Instructions

• Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
• Step 2: In a shallow bowl, mix together the chopped pistachios, panko breadcrumbs, Parmesan cheese (if using), olive oil, Dijon mustard, lemon zest, salt, and black pepper until well combined.
• Step 3: Place the salmon fillets on the prepared baking sheet and gently press the pistachio mixture onto the top of each fillet, covering the surface completely.
• Step 4: Bake the salmon for 12-15 minutes, or until the fish is cooked through and the crust is golden brown and crispy.
• Step 5: Serve the pistachio encrusted salmon immediately, garnished with fresh lemon wedges or your choice of sides.
