Ingredients
• 1 lb salmon fillets, cut into 4 portions
• 1 cup uncooked orzo pasta
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1 large onion, diced
• 1 cup cherry tomatoes, halved
• 2 cups chicken or vegetable broth
• 2 tablespoons fresh lemon juice
• 1 teaspoon dried oregano
• 1/4 cup chopped fresh parsley
• Salt and pepper to taste
Instructions
• Step 1: Preheat your oven to 400°F (200°C). Season the salmon fillets with salt and pepper.
• Step 2: In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium heat. Add the garlic and onion, and sauté for 2-3 minutes until fragrant and translucent.
• Step 3: Add the orzo to the pan and toast for 1-2 minutes, stirring constantly, until lightly golden.
• Step 4: Pour in the broth and stir in the lemon juice, oregano, and a pinch of salt and pepper. Bring the mixture to a simmer.
• Step 5: Nestle the salmon fillets into the orzo mixture, making sure they are partially submerged. Transfer the pan to the preheated oven and bake for 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.
• Step 6: Remove the pan from the oven and sprinkle the cherry tomatoes and chopped parsley over the top.
