Ingredients
• 1 cup short-grain sushi rice
• 1 pound fresh salmon fillets, skin removed and cut into 1-inch cubes
• 1 cucumber, peeled, seeded, and sliced into thin rounds
• 1 avocado, diced
• 2 tablespoons toasted sesame seeds
• 2 tablespoons low-sodium soy sauce
• 1 tablespoon rice vinegar
• 1 teaspoon sesame oil
• 1 teaspoon honey
• 2 green onions, thinly sliced
• 1 sheet nori (dried seaweed), cut into thin strips
Instructions
• Step 1: Cook the sushi rice according to package instructions. Fluff with a fork and let cool slightly.
• Step 2: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey to make the dressing.
• Step 3: In a large bowl, combine the cooked sushi rice, salmon cubes, cucumber slices, avocado, and green onions. Drizzle the dressing over the top and gently toss to coat.
• Step 4: Sprinkle the toasted sesame seeds and nori strips over the top of the sushi bowl just before serving.
