Ingredients
• 1 cup bulgur wheat
• 1 cup boiling water
• 1 cup finely chopped fresh parsley
• 1/2 cup finely chopped fresh mint
• 1 cup diced tomatoes
• 1/2 cup diced cucumber
• 1/4 cup diced red onion
• 3 tablespoons olive oil
• 3 tablespoons fresh lemon juice
• 1 teaspoon salt
• 1/4 teaspoon black pepper
Instructions
• Step 1: In a medium bowl, combine the bulgur wheat and boiling water. Cover and let sit for 30 minutes, or until the bulgur has absorbed all the water and is tender.
• Step 2: Drain any excess water from the bulgur and transfer it to a large mixing bowl.
• Step 3: Add the chopped parsley, mint, diced tomatoes, cucumber, and red onion to the bowl with the bulgur.
• Step 4: In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
• Step 5: Pour the dressing over the tabbouleh salad and gently toss to combine all the ingredients.
• Step 6: Taste and adjust seasoning as needed, adding more salt, pepper, or lemon juice to your preference.
• Step 7: Serve the tabbouleh salad chilled or at room temperature, garnished with additional parsley or mint if desired.
