Tuscan Salmon Recipe

Ingredients

• 4 salmon fillets (about 6 oz each)
• 2 tablespoons olive oil
• 3 cloves garlic, minced
• 1 small onion, diced
• 1 cup diced sun-dried tomatoes
• 1 cup heavy cream
• 1/2 cup grated Parmesan cheese
• 2 tablespoons fresh basil, chopped
• 1 teaspoon dried oregano
• Salt and black pepper to taste


Instructions

• Step 1: Preheat your oven to 400°F (200°C).
• Step 2: In a large, oven-safe skillet or baking dish, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté for 2-3 minutes until fragrant and translucent.
• Step 3: Add the diced sun-dried tomatoes to the skillet and cook for an additional 1-2 minutes, stirring frequently.
• Step 4: Pour in the heavy cream and grated Parmesan cheese, and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and let it simmer for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
• Step 5: Season the salmon fillets with salt and black pepper, then nestle them into the Tuscan cream sauce in the skillet or baking dish.
• Step 6: Transfer the skillet or baking dish to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
• Step 7: Remove the Tuscan salmon from the oven and sprinkle the chopped fresh basil and dried oregano over the top.
• Step 8: Serve the Tuscan salmon immediately, spooning the creamy sauce over the fillets.
